Sweet Potato Pie Preparation

    Prepare Sweet Potatoes

    Preheat your oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into chunks. Boil the chunks in a pot of water for about 20 minutes, or until soft.

    Make Sweet Potato Filling

    Drain the sweet potatoes and mash them in a large bowl. Add granulated sugar, brown sugar, ground cinnamon, ground nutmeg, vanilla extract, and eggs. Mix until well combined. Gradually stir in the evaporated milk until smooth.

    Assemble Pie

    Pour the sweet potato mixture into the prepared pie crust, smoothing the top with a spatula. Bake in the preheated oven for 45-50 minutes or until a knife inserted in the center comes out clean.

    Cool the Pie

    Remove the pie from the oven and let it cool for at least 30 minutes before slicing.

    Mix Ingredients

    In a mixing bowl, whisk together heavy cream, whole milk, granulated sugar, ground cinnamon, vanilla extract, brown sugar, and a pinch of salt until the sugar is dissolved.

    Chill Mixture

    Cover the mixture and refrigerate for at least 2 hours or until thoroughly chilled.

    Churn Ice Cream

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze Ice Cream

    Transfer the churned ice cream to a lidded container and freeze for at least 4 hours or until firm.
