    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from skillet and let them drain on a paper towel.

    Prepare the Sourdough Bread

    Lay out the two slices of sourdough bread on a clean surface. Spread 1 tablespoon of mayonnaise evenly on one side of each slice.

    Layer the Ingredients

    On the non-mayo side of one slice, layer the turkey slices, followed by the cooked bacon, cheddar cheese, and optional lettuce and tomato. Place the second slice of bread on top, mayo side facing in.

Cooking

    Panini Grill

    Preheat your panini press or grill pan over medium-high heat. If using a grill pan, you may want to add a small amount of oil or butter to prevent sticking.

    Grill the Sandwich

    Place the sandwich on the grill or in the pan. If using a pan, press down gently with a spatula. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.

    Serve

    Once cooked, remove the sandwich from the grill and let it sit for a minute before slicing it in half. Serve warm.
