Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove the bacon and let it drain on paper towels.

Cook the Turkey
In the same skillet, drain excess grease if necessary, and add the ground turkey. Season with salt and pepper to taste. Cook over medium heat until the turkey is browned and cooked through, about 7-10 minutes. Make sure to break it apart with a spatula while cooking.

Prepare the Vegetables
Wash the romaine lettuce and chop it into bite-sized pieces. Slice the tomato into thin rounds.

Toast the Bread
While the turkey is cooking, toast the sourdough bread slices in a toaster or on a pan until golden brown.
Assembly

Build the Sandwich
Spread 1 tablespoon of chipotle mayo on one side of each slice of toasted sourdough. On two slices, layer the cooked turkey, crispy bacon, romaine lettuce, tomato slices, and pepperjack cheese. Top with the remaining slices of bread, mayo side down.

Cut the sandwiches in half if desired and serve immediately while warm.
