Method

Fish Preparation

  1. 1

    Marinate the Fish

In a medium bowl, combine olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Add the fish fillets and coat them with the marinade. Let them marinate for at least 15 minutes.

  2. 2

    Grill the Fish

Preheat the grill to medium-high heat. Grill the marinated fish for about 4-5 minutes on each side, or until the fish is cooked through and easily flakes with a fork. Remove the fish from the grill and let it rest for a few minutes.

Cabbage Slaw Preparation

  1. 3

    Prepare the Slaw

In a large bowl, combine shredded cabbage, grated carrot, chopped cilantro, lime juice, salt, and pepper. Toss well to combine all ingredients. Let the slaw sit for about 10 minutes to allow the flavors to meld.

Chipotle Sauce Preparation

  1. 4

    Make the Sauce

In a small bowl, mix together Greek yogurt (or sour cream), chipotle peppers in adobo sauce, lime juice, and garlic powder. Stir until well combined and set aside.

Assembling the Tacos

  1. 5

    Assemble the Tacos

Warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side. Flake the grilled fish into bite-sized pieces and place it on each tortilla. Top with cabbage slaw and drizzle with chipotle sauce. Serve immediately.
