Prepare the Calamari
Rinse the calamari rings under cold water, then pat them dry with paper towels. This helps ensure a crispy finish.

Make the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to create a dry coating mixture.

Soak the Calamari
Dip the calamari rings into the buttermilk, allowing them to soak for about 10 minutes. This helps the coating to stick.

Coat the Calamari
After soaking, remove the calamari from the buttermilk and let the excess drip off. Dredge the rings in the flour mixture, ensuring they are well coated.

Fry the Calamari
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the calamari in batches for about 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Sauté Garlic
Add the minced garlic cloves and sauté for about 1 minute until fragrant, being careful not to burn them.

Add Tomatoes and Seasonings
Pour in the canned crushed tomatoes, then add dried oregano, salt, black pepper, fresh basil, and sugar. Stir well to combine.

Simmer the Sauce
Bring the sauce to a simmer, then reduce the heat to low. Let it cook for about 15-20 minutes, stirring occasionally, until thickened.

Once the marinara sauce is done, serve it warm alongside the crispy calamari.
