Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  3. 3

    Whisk Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale.

  4. 4

    Combine Mixtures

Gradually pour the melted chocolate and butter mixture into the egg mixture, stirring continuously until fully combined.

  5. 5

    Add Flour and Vanilla

Sift in the all-purpose flour, add the vanilla extract, and a pinch of salt. Mix until just combined, being careful not to overmix.

  6. 6

    Prepare Ramekins

Grease four ramekins with butter and dust with flour. Tap out any excess flour.

  7. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  8. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  9. 9

    Cool and Serve

Let the cakes cool for 1 minute. Carefully run a knife around the edges and invert onto plates. Serve immediately with vanilla ice cream.
