Prepare the Tortillas
Stack the corn tortillas and cut them into triangles to create chips.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add a few tortilla triangles to the hot oil. Fry them for about 2-3 minutes until they are golden brown and crispy.

Drain the Chips
Remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Continue frying the remaining tortilla triangles.

Combine Ingredients
In a mixing bowl, combine the diced tomatoes, red onion, jalapeño, and chopped fresh cilantro.

Add Seasoning
Pour the lime juice over the vegetable mixture and sprinkle salt. Gently mix to combine all the ingredients.

Taste and Adjust
Taste the salsa and adjust seasoning with more salt or lime juice if desired.
