Prepare the Beets
Preheat the oven to 400°F (200°C). Wrap the organic beets in aluminum foil and roast them in the oven for about 45-60 minutes, or until fork-tender. Let them cool, then peel and slice them.

Prepare the Pears
While the beets are roasting, slice the Okanagan pears into thin wedges. Drizzle with a bit of olive oil and sprinkle with salt and pepper.

Whip the Gorgonzola
In a mixing bowl, combine Gorgonzola cheese with a splash of olive oil and whip until creamy and smooth.

Toast the Walnuts
In a dry skillet over medium heat, toast the walnuts for about 5-7 minutes until golden and fragrant. Let them cool before chopping.

Assemble the Dish
On a serving plate, arrange the sliced roasted beets, followed by the pear wedges. Add dollops of whipped Gorgonzola on top, and sprinkle with chopped walnuts and fresh thyme. Drizzle with a little more olive oil if desired.
