Method

Preparing the Macaron Shells

    Step 1: Prep the Pans

    Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.

    Step 2: Mix Dry Ingredients

    In a bowl, sift together almond flour and powdered sugar, set aside.

    Step 3: Whip Egg Whites

    In a clean, dry bowl, whip the egg whites until soft peaks form. Gradually add granulated sugar and continue whipping until stiff peaks form.

    Gently fold the almond flour mixture into the whipped egg whites, adding food coloring if desired, until fully combined.

    Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.

    Let the piped macarons rest for about 30 minutes until a skin forms, then bake for 15-20 minutes.

Making the Filling

    In a mixing bowl, cream the butter until smooth.

    Gradually add powdered sugar and vanilla extract, mixing until well combined. Add your choice of flavoring and mix until incorporated.

Assemble the Macarons

    Once the macaron shells are completely cooled, pipe a small amount of filling onto the flat side of half the shells and sandwich with the remaining shells.
