Grilled Cheese Sandwich

    Prepare the Butter

    In a small bowl, mix the softened butter with minced garlic and chopped rosemary until well combined.

    Assemble the Sandwich

    Spread the garlic-rosemary butter on one side of each slice of sourdough bread. Place a slice of cheddar cheese between two slices of bread, buttered sides out.

    Grill the Sandwich

    Heat a skillet over medium heat. Grill the sandwich until golden brown and the cheese is melted, about 3-4 minutes per side.

Josper Roasted Tomato Soup

    Roast the Tomatoes

    Preheat the oven to 400°F (200°C). Place halved tomatoes on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes until caramelized.

    Cook the Soup Base

    In a large pot, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes.

    Combine and Simmer

    Add the roasted tomatoes, vegetable broth, fresh basil, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Adjust seasoning to taste.
