Roasting the Beets
Preheat your oven to 400°F (200°C). Wash the beets thoroughly and trim the tops and roots. Wrap each beet in aluminum foil and place them on a baking sheet. Roast for 45-60 minutes, or until tender when pierced with a fork. Allow to cool, then peel and slice.

Preparing the Vinaigrette
In a small bowl, whisk together olive oil, honey, apple cider vinegar, salt, and black pepper. Segment the mandarin oranges and add them to the vinaigrette.

Assembling the Dish
On a serving platter, lay down a bed of arugula. Top with sliced roasted beets. Drizzle the mandarin orange vinaigrette over the beets and arugula. Finally, add dollops of labneh on top.
