Prepare the Sauce
In a blender or food processor, blend the Italian plum tomatoes until smooth. Add salt to taste and set aside.

Prepare the Tomatoes
Slice the Roma tomatoes into thin rounds and set aside.

Preheat the Oven
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.

Assemble the Pizza
Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a pizza peel or baking sheet. Spread the tomato sauce evenly over the dough. Arrange the sliced Roma tomatoes on top and tear the fresh mozzarella into pieces and scatter them across the pizza.

Bake the Pizza
Drizzle the olive oil over the top of the assembled pizza and add black pepper to taste. Carefully transfer the pizza to the hot oven (or onto the pizza stone) and bake for about 12-15 minutes, or until the crust is golden and the cheese is bubbling.

Garnish and Serve
Remove the pizza from the oven and immediately top with fresh basil leaves. Allow to cool for a minute before slicing. Serve hot.
