Method
Key Lime Pie Directions
- 1
Prepare the Crust
In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Bake at 350°F (175°C) for about 8-10 minutes or until lightly golden. Allow to cool.
- 2
Make the Key Lime Filling
In a large bowl, whisk together the key lime juice, sweetened condensed milk, and egg yolks until smooth. Pour the filling into the cooled graham cracker crust and spread evenly. Bake at 350°F (175°C) for 15 minutes. Remove from the oven and cool to room temperature, then refrigerate for at least 3 hours or until set.
- 3
Prepare the Whipped Cream
In a mixing bowl, whip the heavy whipping cream and powdered sugar together until soft peaks form. Add the lime zest and gently fold to combine.
- 4
Assemble the Pie
Once the pie is set, spread the lime-scented whipped cream over the top. Garnish with fresh lemon basil leaves and drizzle with additional lime juice if desired.
