Prepare the Cauliflower
Cut the cauliflower into bite-sized florets and set aside.

Make the Tempura Batter
In a mixing bowl, combine the tempura batter mix with ice water until smooth.

Heat the Oil
In a deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cauliflower
Dip each cauliflower floret into the tempura batter, allowing excess to drip off, and carefully place them into the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Prepare the Roasted Carrots
Preheat the oven to 400°F (200°C). Peel and chop the carrots into sticks, toss them in a little oil, salt, and pepper, and roast for 20-25 minutes until tender.

Toss Cauliflower in Hot Sauce
In a large bowl, toss the fried cauliflower with hot sauce until evenly coated.

Plate the hot wings with blue cheese dressing, roasted carrot sticks, and celery leaves on the side.
