Saute Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.

Add Garlic and Tomatoes
Stir in the minced garlic and cook for an additional minute until fragrant. Add the canned diced tomatoes and cook for another 2-3 minutes.

Simmer the Soup
Pour in the vegetable broth and add the dried thyme. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes. Season with salt and black pepper to taste.

Add Spinach
In the last 5 minutes of cooking, stir in the chopped fresh spinach and allow it to wilt. Remove from heat and set aside.

In a large salad bowl, combine the mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
