Curds Preparation

    Heat the Milk

    Pour the whole milk into a large stainless steel pot. Heat the milk over medium heat until it reaches 190°F (88°C), stirring occasionally to prevent scorching.

    Add Vinegar

    Once the milk is heated, remove it from heat and slowly stir in the white vinegar. You should see the milk begin to curdle immediately. Let it sit undisturbed for about 5-10 minutes.

    Strain the Curds

    Line a colander with cheesecloth and place it over a large bowl. Carefully pour the curdled milk into the colander, allowing the whey to drain away. Gather the corners of the cheesecloth and twist to form a pouch.

    Rinse and Season

    Rinse the curds under cold running water to remove the vinegar taste. Once rinsed, transfer to a mixing bowl and add salt. If desired, mix in any optional flavorings like herbs or cracked black pepper.

    Store the Curds

    Transfer the curds to an airtight container and refrigerate. The curds can be used immediately or stored for up to 1 week.
