    Prepare the Glass

    Rinse a chilled Old Fashioned glass with absinthe, swirling it around to coat the inside, then discard the excess absinthe.

    Muddle Sugar and Bitters

    In a separate mixing glass, muddle the sugar cube with the Peychaud's bitters and a few drops of water until the sugar is dissolved.

    Add Rye Whiskey

    Add the rye whiskey to the mixing glass filled with ice and stir until well chilled.

    Strain into Glass

    Strain the mixture into the prepared Old Fashioned glass.

  5. 5

    Garnish

    Express the lemon peel over the drink to release its oils and then drop it into the glass as a garnish.
