Prepare brine
In a large pot or mixing bowl, combine 2 liters of cold water and 1 cup apple juice. Add 3 tablespoons kosher salt and 2 tablespoons brown sugar; whisk until mostly dissolved.
Add 1 tablespoon whole black peppercorns, 4 allspice berries, 2 bay leaves, 3 smashed garlic cloves, 4 thyme sprigs, 2 rosemary sprigs, and the quartered whole apple to the brine. Gently crush the apple quarters slightly with the back of a spoon to release some juice and aroma.
Bring one cup of the brine mixture to a simmer over medium heat (about 3–4 minutes) just until the sugar and salt fully dissolve and the aromatics bloom. Do not boil the whole liquid. Remove from heat and cool to room temperature (30–45 minutes).
Once cooled, add additional cold water or ice to bring the brine back to fully cold if needed (the total liquid should be about 2–2.5 liters and refrigerator cold). Place the whole chicken in a nonreactive container or large resealable bag and pour the cooled brine over it, making sure the chicken is fully submerged. If necessary, weigh the chicken down with a plate.
Refrigerate and brine for 8–12 hours (overnight). For a milder effect, brine 6–8 hours; for a stronger flavor and juiciness, do up to 12 hours. Do not exceed 18 hours to avoid overly soft texture.

Remove and dry
Remove the chicken from the brine and discard the brine. Rinse the chicken briefly under cold water to remove surface salt (optional). Pat the chicken very dry inside and out with paper towels. Let the chicken rest uncovered in the refrigerator for 30–60 minutes if time allows — this helps the skin dry and crisp during cooking.
In a small bowl, mix 3 tablespoons softened unsalted butter with 1 tablespoon olive oil, 1 teaspoon salt, 1 teaspoon ground black pepper, 1 teaspoon smoked paprika, 1 teaspoon onion powder, and 1 teaspoon garlic powder. Mash into a smooth compound butter.
Gently loosen the skin over the chicken breast and thighs with your fingers (taking care not to tear it). Smear about two-thirds of the compound butter under the skin across the breasts and over the thighs. Rub the remaining butter all over the exterior skin. Tuck the wing tips under the bird. Place the halved whole apple and 3 fresh thyme sprigs into the cavity. Truss the legs together with kitchen twine so the bird sits compactly on the spit.

Cook the chicken
Roast the chicken on the rotisserie at 180–190°C (350–375°F) until the thickest part of the thigh registers 74°C (165°F) on an instant-read thermometer and the juices run clear, about 75–90 minutes for a 3–3.5 kg chicken. Monitor for even browning; if the breast is browning too quickly, tent loosely with foil (while still rotating) or reduce heat slightly.
About 15 minutes before the end of cooking, combine 1 cup reserved apple cider or pan juices with 1 tablespoon honey and 2 tablespoons melted butter. Brush this glaze onto the chicken as it continues to rotate to build a glossy, slightly sweet crust. Repeat once more if desired.
When the thermometer reaches 74°C (165°F) in the thigh, stop the rotisserie and carefully remove the spit. Transfer the chicken to a carving board and tent loosely with foil. Let rest for 15 minutes; internal temp will rise a couple degrees and juices will redistribute.
Carving & Serving
Remove the twine and the apple and thyme from the cavity. Optionally, reserve the roasted apple to slice and serve alongside the chicken — it will be soft and fragrant.
Carve the chicken into legs, thighs, breasts, and wings. Spoon any collected pan or drip juices into a small saucepan and reduce briefly over medium heat to concentrate for a quick sauce, or drizzle the remaining glaze over slices.
Serve warm with roasted vegetables, mashed potatoes, or a simple green salad. Garnish with extra fresh thyme if desired.
