Prepare Aromatics
Make the Roux
In a medium saucepan over medium heat, add the unsalted butter and the reserved chicken drippings (if using). Once butter is melted and hot but not browned (about 1–2 minutes), add the minced onion. Sauté until translucent, about 3 minutes. Add the minced garlic and cook 30 seconds more, stirring so garlic doesn't burn.
Sprinkle the all-purpose flour evenly over the melted butter and aromatics. Whisk continuously to incorporate and cook the raw flour taste out. Cook the roux for 2–3 minutes until it turns a light golden tan (for a classic poultry gravy) — stir constantly to prevent darkening. This step creates the thickening base.
Add Liquid & Seasonings
Slowly pour in about 1/2 cup of the chicken stock while whisking vigorously to form a smooth paste (this prevents lumps). Continue gradually adding the remaining stock, whisking constantly until fully incorporated.
Bring the mixture to a gentle simmer over medium-low heat. Add the milk or cream (if using) and stir. Add thyme, Worcestershire sauce, soy sauce, kosher salt, black pepper, and optional sage/poultry seasoning. Simmer gently for 6–8 minutes, whisking occasionally, until the gravy thickens to coat the back of a spoon. If it becomes too thick, add additional stock 1–2 tbsp at a time to reach desired consistency.
Adjust & Finish
Taste and adjust seasoning: add more salt, pepper, Worcestershire or a few drops of soy sauce for deeper umami. If the gravy tastes flat, stir in the optional 1/2 tsp lemon juice to brighten flavors.
If you prefer an extra-smooth gravy, strain through a fine-mesh sieve into a warm serving bowl, pressing on solids to extract flavor. Return to pan and rewarm gently if needed.
Stir in chopped fresh parsley just before serving. Serve warm over poultry, mashed potatoes, or stuffing.
