Combine base ingredients

In a medium mixing bowl, add 1 cup yellow mustard, 1/2 cup mayonnaise, and 1/4 cup Carolina-style vinegar-based BBQ sauce. Whisk together until the mixture is smooth and uniformly colored.

Add acid and umami

Stir in 2 tablespoons apple cider vinegar and 1 teaspoon Worcestershire sauce until incorporated. These add tang and depth typical of Carolina-style mustard sauces.

Sweeten and season

Add 1 tablespoon light brown sugar, 1/2 teaspoon granulated garlic, 1/2 teaspoon onion powder, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Whisk well to dissolve the sugar and evenly distribute the spices.

Adjust heat (optional)

If you want a touch of heat, whisk in 1/2 teaspoon hot sauce (or to taste). Taste and adjust — add more hot sauce in 1/4 teaspoon increments if desired.

Adjust consistency

If the dressing is too thick for your use (for example, if you plan to use it as a drizzle), whisk in up to 2 tablespoons water, 1/2 tablespoon at a time, until you reach the desired consistency.

Rest and meld flavors

Cover the bowl or transfer the dressing to an airtight container and refrigerate for at least 30 minutes to let the flavors meld. For best flavor, refrigerate 2–24 hours.

Final taste and storage

Before serving, taste and adjust seasoning: add up to 1/2 teaspoon more salt or 1 teaspoon more apple cider vinegar if you want brighter tang. Store in the refrigerator in a sealed container for up to 2 weeks; stir or shake before each use.
