Prep spinach

Rinse the fresh spinach thoroughly to remove grit. Spin or pat dry. If leaves are large, roughly chop so they wilt evenly.

In a large skillet or sauté pan over medium heat, add 2 tablespoons unsalted butter. Once melted and foaming, add the chopped onion and a pinch of salt. Cook, stirring occasionally, until the onion is soft and translucent, about 5–6 minutes.

Add the minced garlic and cook 30–45 seconds more, until fragrant but not browned.

Add the spinach in batches, letting each batch wilt before adding the next. Use tongs to toss and distribute heat. Cook until all spinach is wilted, about 3–4 minutes total. If excess liquid accumulates, continue cooking briefly to evaporate most of it. Season with 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/8 teaspoon grated nutmeg. Remove the pan from heat and set spinach mixture aside while you make the béchamel.

Béchamel (Cream Sauce)

In a medium saucepan over medium-low heat, melt 3 tablespoons unsalted butter until foamy but not browned.

Whisk in 3 tablespoons all-purpose flour to form a smooth paste (roux). Cook the roux, stirring constantly, for 1.5–2 minutes to remove the raw flour taste—do not let it brown.

Gradually whisk in 1 cup whole milk, pouring slowly and whisking continuously to avoid lumps. Continue whisking until the mixture thickens and comes to a gentle simmer, about 3–5 minutes.

Stir in 1/2 cup heavy cream and continue to simmer gently for another 2 minutes until the sauce is creamy and coats the back of a spoon. If using, whisk in 1/4 cup grated Parmesan until melted and combined.

Taste the béchamel and season with a pinch of salt and a few grinds of black pepper as needed. Keep the sauce warm on very low heat.

Combine & Finish

Return the wilted spinach and any accumulated juices to the skillet (or combine in the saucepan with the béchamel). If you used separate pans, pour the béchamel over the spinach in the skillet.

Gently stir to combine until all spinach is evenly coated with the cream sauce. Simmer together for 2–3 minutes over low heat so flavors meld and excess moisture reduces slightly.

Finish with 1 tablespoon lemon juice and, if desired, 1 tablespoon extra butter for gloss. Stir in 1/4 teaspoon red pepper flakes if you want a touch of heat. Adjust salt and pepper to taste.

Serve hot as a side dish or as a component for stuffed chicken, pasta, or gratins. If not serving immediately, keep warm over very low heat and stir occasionally; the sauce will thicken as it cools—thin with a splash of milk or cream if needed when reheating.
