Prepare Glass & Garnish

    Toast coconut (if using)

    Preheat a small dry skillet over medium heat. Add shredded coconut and toast, stirring frequently, until golden brown and fragrant, about 2–3 minutes. Remove and cool.

    If rimming the glass, moisten the glass rim with a lime wedge and dip into toasted coconut. Set glass in freezer to chill while you mix the cocktail.

Make Banana Purée

    Mash banana

    In a small bowl, mash 1/2 a very ripe banana with a fork until mostly smooth (small lumps are fine). If you prefer a silkier texture, briefly blitz in a mini blender or with an immersion blender.

    If using banana liqueur, stir it into the mashed banana to help dissolve and integrate flavor.

Shake Cocktail

    Add the white rum, coconut horchata, fresh lime juice, mashed banana (and banana liqueur if using), simple syrup, and 1 tsp ground cinnamon into a cocktail shaker.

    Fill the shaker with ice, cap, and shake vigorously for 12–15 seconds to chill thoroughly and incorporate the banana into the mixer.

    Strain the mixture through a fine-mesh strainer into a glass filled with crushed ice to remove banana fibers for a smoother sip. If you like a thicker, smoothie-like texture, double-strain less and pour directly over ice.

    If using the dark rum float: slowly pour the 0.5 oz dark rum over the back of a spoon held just above the drink surface to create a float.

Finish & Serve

    Garnish with a lime wheel or wedge on the rim and a light sprinkle of toasted coconut and a tiny dusting of cinnamon on top.

    Serve immediately with a straw. Stir once before drinking to incorporate the float if used.
