Method
Cocktail
- 1
Prepare shaker
Fill a cocktail shaker with ice to chill and partially dilute the drink while building.
- 2
Combine ingredients
Add 2 oz light rum, 0.75 oz pineapple-habanero syrup, 0.5 oz Aperol, 0.5 oz sweet vermouth, 0.5 oz fresh lime juice and 1 dash bitters into the shaker over ice.
- 3
Shake
Shake vigorously for 10–15 seconds until the outside of the shaker is very cold and slightly frosty. This both chills and properly dilutes the cocktail.
- 4
Strain
Double-strain the mixture (using a Hawthorne and fine mesh strainer if available) into a chilled coupe or Nick & Nora glass. If you prefer the drink on the rocks, fill a rocks glass with fresh ice and strain over it instead.
Garnish & Finish
- 5
Express a lime peel briefly over the drink (optional) to release oils, then discard or rim glass. Garnish with a pineapple wedge or wheel on the rim and float a thin habanero slice on top if you want an extra visual heat note. Serve immediately.
