Build the cocktail

Fill a large wine glass or rocks glass generously with ice cubes (about 6 cubes) so the glass is well chilled.

Add Aperol

Pour 2 oz of Aperol over the ice.

Add Prosecco

Slowly pour 3 oz of chilled Prosecco into the glass. Pour gently to preserve bubbles.

Top with soda

Add 1 oz of chilled soda water to lighten the drink and add effervescence.

Stir gently

Use a bar spoon or long spoon to give the cocktail 2–3 gentle turns to combine ingredients without flattening the bubbles.

Garnish and serve

Slip an orange slice onto the rim or float it in the glass. Serve immediately while cold and fizzy.
