Chill

Chill a flute or coupe in the freezer for several minutes or fill it with ice water while you prepare the cocktail.

Shake base

In a cocktail shaker, add 1.5 oz gin, 0.5 oz St. Germain, 0.75 oz fresh lemon juice, 0.25 oz simple syrup and a handful of ice (about 1 cup). Secure the lid and shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted.

Strain

Discard ice water from the chilled glass (if used). Double-strain the shaken mixture into the chilled flute or coupe to remove ice shards and any pulp. Use a Hawthorne strainer and a fine mesh strainer if available.

Top with sparkling wine

Gently top the cocktail with 3 oz chilled Champagne or dry sparkling wine. Pour slowly down the side of the glass to preserve bubbles and avoid foaming over.

Garnish and serve

Express the oils of a lemon twist over the surface by pinching it skin-side down, then drop the twist into the glass or rest it on the rim. Serve immediately while effervescent.
