Preparation of Garlic Aioli

Make the Garlic Aioli
In a small bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Mix well until smooth and creamy. Adjust seasoning to taste.
Assembling the Tiny Turkey Melt

Layer the Ingredients
On two slices of sourdough bread, spread a generous amount of garlic aioli. Layer the turkey breast slices evenly over the aioli, followed by the shredded cheddar cheese. If using, add fresh spinach and tomato slices on top of the cheese.

Top and Grill
Place the remaining slices of sourdough bread on top of the assembled sandwiches. Heat a non-stick skillet or griddle over medium heat. Add a little butter or oil to the skillet if desired.

Cook the Sandwiches
Carefully place the sandwiches in the skillet and cook for about 3-4 minutes on one side until golden brown. Flip the sandwiches and continue to cook for another 3-4 minutes, pressing down gently with a spatula, until the cheese is melted and the bread is crispy.
