Grate the Cheese
Using a box grater or food processor, grate the cheddar and Swiss cheese until finely shredded.

Add Garlic
Mince the garlic cloves and add them to the melted butter. Cook for 1-2 minutes until fragrant, being careful not to burn the garlic.

Combine Ingredients
In a large mixing bowl, combine the grated cheddar and Swiss cheese with the garlic butter mixture. Add salt and black pepper, and mix thoroughly until the cheeses are evenly coated.
Assembling the Sandwich

Prepare the Bread
Take the sourdough bread slices and place them on a clean surface. Evenly distribute the cheese mixture on two of the bread slices.

Top and Grill
Place the remaining slices of bread on top of the cheese-covered slices to form sandwiches. Heat a non-stick skillet over medium heat and add a little butter or oil if desired. Grill the sandwiches for 3-4 minutes on each side until golden brown and the cheese is melted.

Once the sandwiches are grilled to perfection, remove them from the skillet, let them cool for a minute, then slice in half and serve immediately.
