Method

Fries Preparation

  1. 1

    Cut the Potatoes

Wash the russet potatoes thoroughly under cold water. Cut each potato into evenly sized fries, about 1/4 inch thick.

  2. 2

    Soak the Fries

Place the cut fries in a large bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and prevents them from sticking together.

  3. 3

    Dry the Fries

After soaking, drain the fries and pat them dry with paper towels to remove as much moisture as possible.

  4. 4

    Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

  5. 5

    Fry the Potatoes

Carefully add the fries in batches to the hot oil, making sure not to overcrowd the pot. Fry for 5-6 minutes until they are golden brown and crispy.

  6. 6

    Drain and Season

Using a slotted spoon, remove the fries from the oil and drain them on paper towels. While they are still hot, sprinkle with salt to taste.

Dipping Sauce Preparation

  1. 7

    Mix the Sauce

In a medium bowl, combine mayonnaise, ketchup, garlic powder, and hot sauce. Stir until everything is well blended.

  2. 8

    Taste and Adjust

Taste the sauce and adjust the seasoning if needed. Add more hot sauce for extra heat, or more mayonnaise for a creamier texture.
