Prepare greens
Wash the mixed salad greens thoroughly in cold water, then spin dry in a salad spinner or pat dry with clean kitchen towels. Place the dried greens into a medium mixing bowl (about 4 cups loosely packed).

Add cheese
If using, sprinkle 2 tablespoons of crumbled feta or shaved Parmesan over the assembled salad ingredients and toss very lightly to combine (you will dress the salad in the next step).

Make vinaigrette
In a small bowl or jar, add 2 tablespoons extra-virgin olive oil, 1 tablespoon red wine vinegar, 1/2 teaspoon Dijon mustard, 1/2 teaspoon honey, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Whisk briskly (or close the jar and shake vigorously) until the dressing is emulsified and slightly thickened, about 20–30 seconds. Taste and adjust salt, sweetness, or acidity as desired.

Dress salad
Pour the vinaigrette over the salad — start with about half the dressing and toss gently to coat. Add more dressing to taste if needed (usually all of it for 4 cups greens if you prefer more dressed).

Serve
Transfer the dressed salad to a side plate or bowl and serve immediately. Leftover dressing can be stored in an airtight container in the refrigerator for up to 5 days; bring to room temperature and whisk before using.
