    Prep and Bake Potatoes

    Preheat oven to 425°F (220°C). Scrub russet potatoes and pat dry. Pierce each potato 3 times with a fork. Rub each potato with olive oil, then sprinkle with coarse kosher salt and black pepper. Place potatoes directly on a baking rack or sheet and bake for 60–75 minutes, until skins are crisp and a skewer slides in easily. For catering efficiency, wrap cooked potatoes individually in foil to hold heat for up to 1 hour, or keep unwrapped in a warming drawer or chafing dish on low.

    Optional: Fluffed Baked Potato Centers

    If you prefer loaded mashed style: after baking, cut a lengthwise slit and scoop out about 1/3 of the flesh into a mixing bowl. Add 2 tbs butter per 4 potatoes, 1/4 cup milk, salt and pepper to taste, and 1 cup shredded cheddar (optional). Mash until creamy. Spoon mixture back into skins and keep warm in a covered pan.

    Pulled Pork (already cooked)

    Reheat pulled pork in a heavy pan over medium heat with 1/2 cup barbecue sauce per 500 g and 1/4 cup water. Stir and heat until internal temp reaches 165°F (74°C) and sauce is glossy, about 8–12 minutes. Keep hot in a covered steam table pan.

    Smoked Brisket (already cooked)

    Slice or chop brisket and reheat gently in a pan with 1/2 cup beef stock per 500 g and 2 tbs barbecue sauce. Cover and warm over low heat until 160–165°F (71–74°C), 10–15 minutes; avoid drying. Hold in a covered pan with a little moisture.

    Grilled Chicken (already cooked)

    Shred or dice cooked grilled chicken and reheat in a shallow pan with 1/4 cup chicken stock per 500 g and 2 tbs barbecue sauce or ranch, warming until 165°F (74°C). Keep warm and covered for service.

Cheeses & Dairy

    Shred cheeses and place in shallow hotel pans. Keep cheddar and monterey jack warm over low heat or offer at room temperature for guests to sprinkle. Put sour cream in a chilled bowl or squeeze bottles. Keep butter softened in a butter dish or warm but not melted for spreading. If serving mashed-style centers, incorporate cheddar and milk during mashing as described above.

Fixins & Toppings

    Prepare toppings: crisp and crumble bacon; steam broccoli and cut into bite-size florets; drain chili if needed and keep warm in a ladle-ready pan; dice tomatoes and red onion; slice green onions and chop chives and cilantro; place pickled jalapeños, hot sauce, barbecue sauce, and ranch into serving bowls or squeeze bottles. Arrange all toppings in individual bowls in the order guests will choose them, and label meats so guests know their options.

Assembly & Service

    Set up a buffet line with warm potatoes first, followed by the chosen meat steam table pans, then cheese/dairy, then fixins and sauces. To assemble a baked potato: take one baked potato, cut a slit down the center and push ends to open. If offering mashed centers, spoon the prepared filling into the skin; otherwise add a pat of butter and a few spoonfuls of sour cream. Top with 3–4 oz (85–115 g) of the chosen meat. Sprinkle with shredded cheddar (about 1/3 cup), then add bacon, green onions, tomatoes, red onion, broccoli or chili as desired. Finish with a drizzle of BBQ, ranch, or hot sauce and a sprinkle of chives or cilantro. Provide napkins and plates sized for an entrée.

    For catering quantities and holding: keep hot items at or above 140°F (60°C) in covered chafing pans. Replenish toppings in small batches to maintain freshness and appearance. Label any allergen-containing items (dairy, bacon/pork, gluten in some chili or sauces) for guests.
