Sausage & vegetables

    Prepare sausage

    Remove casings from the sausages by slicing lengthwise and pushing the meat out. Break the sausage meat into 1/2–1 inch pieces with a spoon or your hands.

    Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat.

    Add the sausage pieces to the hot skillet in a single layer. Let brown without stirring for 2 minutes, then break pieces further and cook 4–5 minutes until nicely browned.

    Add the sliced onion and red bell pepper to the skillet with the browned sausage. Cook, stirring occasionally, for 5–6 minutes until vegetables are softened and starting to caramelize.

    Stir in the minced garlic, smoked paprika, black pepper and 1/2 teaspoon salt. Cook 30–60 seconds until fragrant.

    Taste and adjust seasoning with remaining salt if needed. Remove skillet from heat and set aside.

    Make the sauce: In a small bowl combine mayonnaise and Dijon mustard; whisk until smooth. Taste and add a pinch of salt or a squeeze of lime if desired.

    Warm the tortillas for pliability: stack tortillas, wrap in a clean kitchen towel or damp paper towel and microwave 20–30 seconds, or heat individually in a dry skillet 20 seconds per side.

    Lay a warmed tortilla flat. Spread about 1 tablespoon of the mayo-Dijon sauce down the center of each tortilla.

    Divide the spinach or mixed greens evenly among the tortillas, placing the greens on top of the sauce in a line down the center.

    Spoon the cooked sausage and vegetable mixture evenly over the greens (about 1/4 of the mixture per tortilla).

    Sprinkle shredded cheddar cheese evenly over the sausage in each tortilla (about 3/8 cup per wrap). Add optional pickled jalapeños or salsa/hot sauce if using.

    Fold the sides of the tortilla over the filling, then roll tightly from the bottom to form a wrap. If desired, place seam-side down in a skillet over medium heat and press with a spatula 1–2 minutes per side until golden and cheese is melty.

    Slice each wrap in half on the diagonal and serve immediately with lime wedges on the side.
