Onion Rings

Prep the onions
Peel the onions and slice into 1/4- to 1/2-inch thick rings. Separate rings and set aside. Reserve any small pieces for frying or discard.

Make seasoned flour
In a shallow bowl combine 0.5 cups flour, 0.5 tsp salt and 0.25 tsp pepper. Toss onion rings in this seasoned flour just to coat lightly; shake off excess. This helps batter adhere.

Make batter
In a medium bowl whisk together 1.5 cups all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp kosher salt, 1/2 tsp black pepper, 1 tsp paprika and 1/2 tsp garlic powder. In a separate bowl whisk the egg with 1 cup buttermilk until blended, then stir in 1/2 cup cold beer or club soda. Pour the wet mixture into the dry ingredients and whisk just until combined — batter should be thick but pourable. If using panko for extra crunch, place 1 cup panko in a shallow dish for dredging after batter.

Heat the oil
Pour vegetable oil into a deep skillet or Dutch oven to a depth of about 1 to 1.5 inches (about 1.5 cups). Heat over medium-high until oil reaches 350°F (175°C). If you don't have a thermometer, test with a small drop of batter — it should sizzle and rise to the top steadily.

Batter and fry
Working in small batches (4–6 rings depending on your pan), dredge each flour-coated ring through the batter, letting excess drip off, then optionally press both sides into panko for an extra-crispy crust. Carefully lower rings into hot oil; do not overcrowd. Fry until golden brown and crisp, about 2–3 minutes per side. Use a slotted spoon or spider to turn and remove rings.

Drain and keep warm
Transfer fried rings to a wire rack set over a baking sheet or to paper towels to drain. Keep finished batches in a 200°F (95°C) oven to stay warm while frying remaining rings. Sprinkle chopped parsley over rings just before serving, if desired.
