    Prepare bread and spreads

    Bring butter to room temperature if chilled so it spreads easily. On one side of each bread slice, spread about 1/2 tablespoon of butter evenly to cover the entire face of the slice. On the opposite (unbuttered) side of one slice, spread 1 teaspoon Dijon mustard; on the unbuttered side of the other slice, spread 1 teaspoon mayonnaise. These spreads will be the interior flavors of the sandwich.

    Layer turkey and cheese

    Place one slice of bread butter-side down in front of you with the mayonnaise or mustard side facing up. Layer the turkey evenly across the bread (about 4 oz), slightly overlapping slices to cover the surface. Top the turkey with the 2 slices of cheddar and then the 1 slice of Swiss so the cheese covers the turkey and edges of the bread. Add optional dill pickle slices and arugula/lettuce on top of the cheese if using.

    Assemble sandwich

    Place the second slice of bread on top, butter-side up and spread-side down, creating a buttered exterior on both top and bottom for even browning.

    Preheat pan or griddle

    Heat a heavy skillet, grill pan, or flat griddle over medium to medium-low heat for 2 to 3 minutes. The surface should be hot enough to sizzle a drop of water but not so hot that butter browns immediately.

    Grill the sandwich

    Place the assembled sandwich in the hot pan. Press gently with a spatula or use a weighted press. Cook for 3 to 4 minutes on the first side, checking after 2 minutes to ensure the bread is turning golden brown and not burning. If the bread is browning too quickly before the cheese melts, lower the heat slightly and cover the pan with a lid for 1–2 minutes to trap heat and encourage cheese melting.

    Flip and finish

    Carefully flip the sandwich with a spatula and cook the second side for another 2 to 4 minutes until golden brown and cheese is fully melted. Press gently while cooking to improve contact and melting. If needed, cover the pan briefly to finish melting.

    Rest and slice

    Transfer the grilled sandwich to a cutting board and let it rest for 1 minute to allow cheese to settle. Slice the sandwich in half diagonally or down the middle using a sharp knife.

    Serve immediately while hot. Optionally accompany with kettle chips, a small salad, or extra pickle slices.
