Battered Cheese Curds

Prepare Curds
Pat the cheese curds dry with paper towels. If pieces are very large, cut into bite-sized pieces (~1 to 1.25 inches). Chill curds in the refrigerator for 10–15 minutes — cold curds help slow melting during frying.

Make Batter
In a medium bowl whisk together 3 tablespoons all-purpose flour, 1 tablespoon cornstarch, 1/2 teaspoon baking powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until uniform. In a separate small bowl beat the cold egg lightly. Add the egg to the dry mix, then slowly whisk in 3/4 cup cold sparkling water until a smooth, slightly thick batter forms. If you want extra cold batter, place the batter bowl over an ice bath or add the ice cubes briefly and remove before coating.

In a shallow dish combine 1/2 cup flour, 1/2 cup breadcrumbs or panko (if using), 1/4 teaspoon salt, and 1/8 teaspoon black pepper. This dry mix will help the batter adhere to the curds and give extra crunch.

Working in small batches, lightly toss chilled cheese curds in the dry coating to coat evenly, shaking off excess. This creates a dry surface for the wet batter to cling to.

Heat Oil
Pour about 2–3 inches of oil (approximately 3 cups) into a heavy-bottomed pot or Dutch oven. Heat the oil over medium-high heat until it reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with a small drop of batter — it should sizzle and rise steadily without browning instantly.

Coat and Fry
One at a time, dip each dredged curd into the batter, allowing excess to drip back into the bowl, then gently lower into the hot oil using a slotted spoon or wire skimmer. Fry in small batches (6–8 curds at a time depending on pot size) to avoid temperature drop. Fry until golden brown and puffed, about 1.5–2.5 minutes, turning gently if needed for even color.

Drain
Remove fried curds with a slotted spoon to a wire rack set over a sheet pan or to paper towels to drain. Sprinkle with a light pinch of salt immediately while still hot. Allow 1–2 minutes before serving so the outer batter sets but the inside remains gooey.

To re-crisp, bake at 375°F (190°C) on a wire rack for 4–6 minutes or re-fry for 20–30 seconds. Avoid microwave reheating — it will make them soggy and cause cheese to over-melt.
Serving
