Burger Sauce

    Make the sauce

    In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, dill pickle relish, apple cider vinegar, garlic powder, onion powder, salt, and black pepper until smooth. Cover and refrigerate while you prepare the other components (minimum 15 minutes to let flavors meld).

    Cook the bacon

    Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top. Arrange bacon slices in a single layer on the rack. Bake 12–18 minutes until crisp to your preference. Remove and transfer bacon to a paper-towel-lined plate to drain. Keep warm.

Beef Patties

    Form patties

    Divide ground beef into 4 equal portions (about 4 oz / 113 g each). Gently form into patties about 3/4 inch thick and 3–4 inches in diameter, making a shallow indentation in the center of each patty with your thumb to reduce puffing during cooking. Avoid overworking the meat.

    Season

    Lightly brush both sides of each patty with neutral oil. Season generously with kosher salt and freshly ground black pepper on both sides. Brush the top side with a little Worcestershire sauce.

    Cook patties

    Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat until hot (about 2–3 minutes). Place patties in the dry skillet (do not overcrowd; work in batches if necessary). Cook 3–4 minutes on the first side without moving to develop a crust. Flip and immediately place a slice of cheddar on each patty. Cook an additional 3 minutes for medium; adjust 1–2 minutes less for medium-rare or longer for medium-well. If using a lid, cover for the last minute to help cheese melt.

Buns & Assembly

    Toast buns

    While patties are finishing, spread softened butter on the cut sides of the hamburger buns. Place buttered sides down in a separate skillet over medium heat or on a griddle and toast 1–2 minutes until golden and crisp. Alternatively, toast in the oven under the broiler for 1–2 minutes, watching closely.

    Slice produce

    Thinly slice the red onion and tomato. Separate and rinse lettuce leaves if needed. Pat dry with paper towels.

    Assemble burgers

    Spread about 1 tablespoon of burger sauce on the bottom half of each toasted bun. Place lettuce leaf(s) on the sauce, add a cheeseburger patty, top with two slices of crispy bacon, 2 pickle slices, a few rings of red onion, and a tomato slice. Spread a little sauce on the top bun and close the burger.
