Pulled Pork Preparation

Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Create the Marinade
In a bowl, mix together the smoked paprika, cumin, salt, and black pepper. Rub this mixture all over the pork.

Slow Cook the Pork
Place the pork in a slow cooker. Add the chopped onion, minced garlic, apple cider vinegar, and water. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker. Use two forks to shred the meat. Return the shredded pork to the cooker and mix in the barbecue sauce. Allow it to heat through for another 30 minutes.

Prepare the Vegetables
Finely shred the green cabbage and grate the large carrot.

Make the Coleslaw Dressing
In a large bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix until well combined.

Combine Coleslaw Ingredients
Add the shredded cabbage and grated carrot to the dressing and mix until the vegetables are evenly coated. Refrigerate for at least 30 minutes to let the flavors meld.

Assemble the Sandwiches
Toast the hamburger buns if desired. Pile a generous amount of the pulled pork onto the bottom half of each bun, top with coleslaw, and add pickle slices if using. Place the top half of the bun on and serve.
