Brisket Preparation

Season the Brisket
In a small bowl, mix together the salt, black pepper, paprika, garlic powder, onion powder, brown sugar, and mustard powder. Rub the seasoning mixture all over the brisket, ensuring it is evenly coated. Wrap the brisket in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Prepare the Smoker
Preheat your smoker to 225°F (107°C). Use your choice of wood chips (such as hickory or oak) for a smoky flavor.

Smoke the Brisket
Place the brisket in the smoker, fat side up. Smoke for approximately 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C). This may take around 8-10 hours for a 5 lb brisket.

Make the BBQ Sauce
In a medium saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Stir to combine and bring to a simmer over medium heat.

Simmer the Sauce
Once the sauce reaches a simmer, reduce the heat to low and let it cook for about 20 minutes, stirring occasionally. This will help the flavors meld together.
