Marinate the Fish

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper to create a marinade. Add the trigger fish pieces and coat them well. Let them marinate for at least 30 minutes.

Cook the Fish

Heat a grill or skillet over medium-high heat. Once hot, add the marinated trigger fish. Cook for 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Garnish with fresh parsley.

Cook the Quinoa

In a saucepan, bring vegetable broth to a boil. Add quinoa, cover, and reduce heat to low. Simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

While the quinoa is cooking, chop the cherry tomatoes and cucumber. In a bowl, combine cooked quinoa, cherry tomatoes, diced cucumber, and feta cheese. Drizzle with olive oil and red wine vinegar, then season with salt and black pepper. Toss gently to combine.
