Prepare Teriyaki Sauce

Make the Sauce
In a small saucepan, combine soy sauce, brown sugar, rice vinegar, honey, minced garlic, grated ginger, and sesame oil. Heat over medium heat, stirring until sugar is dissolved.

Thicken the Sauce
In a small bowl, mix cornstarch with water to form a slurry. Add this to the saucepan and continue to cook, stirring constantly until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.

Stir-fry the Vegetables
In a large skillet or wok, add a splash of oil and heat over medium-high. Add the green beans and broccoli, stir-frying for about 3-4 minutes until tender-crisp. Add the sliced red bell pepper and continue cooking for another 2-3 minutes.

Combine
Once the chicken is cooked, slice it and add it to the skillet with the vegetables. Pour in the remaining teriyaki sauce and toss everything together for about 2 minutes until heated through.
Serve

Plate the Dish
Serve the teriyaki chicken and vegetables over cooked rice. Garnish with toasted cashews on top.
