Method

Crab Cake Preparation

  1. 1

    Prepare the Crab Mixture

In a large bowl, combine the crab meat, bread crumbs, mayonnaise, Dijon mustard, Worcestershire sauce, egg, Old Bay seasoning, salt, and black pepper. Mix gently to avoid breaking up the crab meat.

  2. 2

    Form the Crab Cakes

Shape the mixture into large patties, about 4-5 inches in diameter. Place them on a tray and refrigerate for at least 30 minutes to help them hold their shape.

  3. 3

    Cook the Crab Cakes

In a skillet, melt the butter over medium heat. Add the crab cakes and cook for about 4-5 minutes on each side, or until golden brown and heated through.

Steak Preparation

  1. 4

    Prepare the Steak

Rub the flat iron steak with olive oil, garlic powder, salt, and black pepper. Let it marinate for at least 15 minutes at room temperature.

  2. 5

    Grill the Steak

Preheat the grill to high heat. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes before slicing.

Vegetable Preparation

  1. 6

    Cook the Broccoli

In a pot of boiling salted water, add the broccoli florets and cook for about 3-4 minutes until tender but still bright green. Drain and set aside.

  2. 7

    Cook the Red Potatoes

Cut the red potatoes into quarters and boil them in salted water for about 15 minutes or until fork-tender. Drain and set aside.

Hollandaise Sauce Preparation

  1. 8

    Make the Hollandaise Sauce

In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water, whisking constantly until the mixture thickens.

  2. 9

    Incorporate Butter

Remove from heat and slowly whisk in melted butter until fully incorporated. Season with salt and a pinch of cayenne pepper.

Assembly

  1. 10

    Plate the Dish

On a plate, place the crab cake in the center, top it with a sliced portion of the grilled steak. Arrange the broccoli and red potatoes around the crab cake, and drizzle the hollandaise sauce over the steak and crab cake.
