Main Ingredients

Wood Chips (for smoking)

Method

Preparation

  1. 1

    Prepare the Beef Tenderloin

Start by trimming any excess fat from the beef tenderloin. Pat it dry with paper towels.

  2. 2

    Marinate the Beef

Rub the olive oil all over the beef tenderloin. In a small bowl, mix together kosher salt, black pepper, garlic powder, onion powder, and smoked paprika. Generously coat the beef tenderloin with the spice mixture. Let it marinate for at least 1 hour at room temperature, or refrigerate for up to 24 hours for deeper flavor.

Smoking

  1. 3

    Prepare the Smoker

Preheat your smoker to 225°F (107°C). Soak the hickory wood chips in water for at least 30 minutes before using.

  2. 4

    Add Wood Chips

Once the smoker is ready, drain the wood chips and add them to the smoker box or directly on the coals.

  3. 5

    Smoke the Beef Tenderloin

Place the marinated beef tenderloin on the smoker grate. Close the lid and smoke for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare or 140°F (60°C) for medium.

  4. 6

    Rest the Meat

Once cooked to your desired doneness, remove the beef tenderloin from the smoker and let it rest for 10-15 minutes before slicing.

Serving

  1. 7

    Slice and Serve

Slice the beef tenderloin against the grain into thin slices. Serve with your choice of BBQ sauce on the side.
