Preparation

Prepare the Rub
In a medium bowl, combine the brown sugar, paprika, garlic powder, onion powder, black pepper, cayenne pepper, and salt. Mix well until all ingredients are thoroughly blended.

Prepare the Ribs
Remove the silver skin from the back of the pork ribs. Pat the ribs dry with paper towels to ensure the rub adheres well.

Apply the Rub
Generously coat the ribs with the spice rub, massaging it into the meat. Ensure both sides are well covered. Wrap the ribs in plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
Smoking

Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Smoke the Ribs
Once the smoker is ready, place the ribs on the grill grates bone side down. Add the soaked hickory chips to the smoker box or directly on the coals. Close the lid and smoke the ribs for about 4 to 5 hours, or until the internal temperature reaches 195°F (90°C) for tender meat.

Rest and Serve
After smoking, remove the ribs from the smoker and let them rest for at least 15 minutes. Cut into portions and serve hot.
