Preheat Oven
Preheat your oven to 400°F (200°C).

Bake Potatoes
Prick each potato with a fork and place them on a baking sheet. Bake for about 45-60 minutes, or until they are tender.

Prepare Potato Skins
After the potatoes are baked, let them cool for a few minutes. Cut each potato in half lengthwise and scoop out the inside, leaving about 1/4 inch of potato on the skin.

Add Cheese and Bacon
Fill each potato skin with a mixture of cheddar cheese, Monterey Jack cheese, and crumbled bacon.

Final Bake
Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Garnish
Remove from the oven and sprinkle chopped green onions on top before serving.

Mix Ingredients
In a mixing bowl, combine the chopped cucumber, Greek yogurt, garlic powder, dill, lemon juice, salt, and black pepper.

Blend and Chill
Mix all the ingredients until well combined. Adjust seasoning to taste. Refrigerate for at least 30 minutes before serving for the flavors to meld.
