Bread the Chicken
Cut the chicken breasts into bite-sized pieces. In a bowl, whisk together the eggs, salt, and black pepper. In a separate bowl, mix the flour and cornstarch. Dip each piece of chicken into the egg mixture, then coat with the flour mixture, shaking off any excess.

Fry the Chicken
In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken pieces in batches. Fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken and place it on a paper towel-lined plate to drain excess oil.

Make the Orange Sauce
In a small bowl, whisk together the fresh orange juice, soy sauce, honey, rice vinegar, minced garlic, minced ginger, red pepper flakes, cornstarch, and water until smooth. Pour the mixture over the stir-fried vegetables and cook for an additional 2-3 minutes until the sauce thickens.

Combine Chicken and Sauce
Add the fried chicken pieces to the skillet with the vegetable and sauce mixture. Toss to coat the chicken with the sauce evenly. Cook for another minute to heat through.
