For the Onion Rings

    Prepare the Onions

    Peel the onions and slice them into thick rings, about 1/2 inch wide. Separate the rings and set aside.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, paprika, salt, and black pepper. Whisk together until well combined. Gradually add the cold sparkling water, stirring until the batter is smooth and has a thick consistency.

    Heat the Oil

    In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

    Coat the Onion Rings

    Dip each onion ring into the batter, ensuring it is fully coated. Allow excess batter to drip off.

    Fry the Onion Rings

    Carefully place the coated onion rings into the hot oil, a few at a time to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

    Wash the cucumber and grate it using a box grater. Place the grated cucumber in a clean kitchen towel and squeeze out excess moisture.

    In a medium bowl, combine the Greek yogurt, grated cucumber, lemon juice, fresh dill, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
