Potato Wedges

Creamy Cucumber Dip

Method

Potato Wedges Preparation

  1. 1

    Preheat Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Potatoes

Wash and scrub the russet potatoes. Cut each potato into wedges, approximately 1/2 inch thick.

  3. 3

    Season Potatoes

In a large bowl, toss the potato wedges with olive oil, Old Bay seasoning, and salt until evenly coated.

  4. 4

    Bake Potatoes

Spread the seasoned potato wedges in a single layer on a baking sheet. Bake for 30-35 minutes or until golden brown and crispy, flipping halfway through.

Creamy Cucumber Dip Preparation

  1. 5

    Prepare Cucumber

Peel and finely dice the cucumber. Place it in a bowl and set aside.

  2. 6

    Mix Dip Ingredients

In a separate bowl, combine Greek yogurt, diced cucumber, minced garlic (finely chop or press the clove), lemon juice, dill, and salt to taste. Mix until well combined.

  3. 7

    Chill the Dip

Cover the dip and refrigerate for at least 15 minutes to allow the flavors to meld.
