Salad Preparation
Prepare Spinach
Wash the fresh spinach leaves thoroughly under running water. Spin dry or pat them with a clean kitchen towel to remove excess moisture.
Prepare Vegetables
Halve the cherry tomatoes and set aside. Peel the cucumber and slice it into thin rounds. Thinly slice the red onion.
Combine Salad Ingredients
In a large salad bowl, combine the washed spinach, halved cherry tomatoes, sliced cucumber, and red onion. Toss gently to mix.
Add Toppings
Sprinkle the crumbled feta cheese and walnuts over the top of the salad.
Raspberry Vinaigrette Preparation
Mix Vinaigrette
In a small bowl, whisk together the raspberry vinegar, olive oil, honey, salt, and black pepper until well combined and emulsified.
Serve
Serve the spinach salad with the raspberry vinaigrette on the side for drizzling as desired.
