Preparation of Wings

    Prepare the Chicken Wings

    In a large bowl, combine the chicken wings with olive oil, salt, black pepper, garlic powder, and paprika. Mix well to ensure all wings are evenly coated.

    Soak the Wood Chips

    Soak the hickory wood chips in water for at least 30 minutes before smoking. This will help to create smoke and enhance the flavor.

Smoking the Wings

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). Add the soaked hickory wood chips to the smoker box or directly on the coals if using a charcoal smoker.

    Smoke the Wings

    Place the seasoned chicken wings on the smoker rack. Close the lid and smoke for 1.5 to 2 hours, or until the wings reach an internal temperature of 165°F (74°C) and have a nice smoky flavor.

Preparing the Dipping Sauce

    Make the Dipping Sauce

    In a small saucepan over medium heat, melt the butter. Once melted, add the hot sauce, garlic powder, honey, and lemon juice. Stir until well combined and heated through.

    Remove the smoked wings from the smoker and let them rest for a few minutes. Serve them hot with the dipping sauce on the side.
