Entree 1: Grilled Lemon Herb Chicken

    Marinate the Chicken

    In a bowl, combine lemon juice, olive oil, minced garlic, chopped parsley, salt, and black pepper. Add the chicken breasts and coat well. Cover and refrigerate for at least 30 minutes.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Entree 2: Creamy Mushroom Risotto

    Sauté the Vegetables

    In a large pan, melt butter over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add sliced mushrooms and cook until softened.

    Cook the Risotto

    Add Arborio rice to the pan, stirring for 1-2 minutes. Gradually add the broth, one cup at a time, stirring continuously until absorbed before adding more. This should take about 18-20 minutes.

    Stir in grated parmesan cheese, salt, and black pepper. Cook for an additional 2-3 minutes until creamy and heated through.

    Prepare the Salmon

    Preheat the oven to 400°F (200°C). In a baking dish, place salmon fillets and drizzle with olive oil and lemon juice. Sprinkle with chopped dill, salt, and black pepper.

    Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
