Preparation of Crabcakes

    Prepare the Crab Mixture

    In a large mixing bowl, combine the fresh crab meat, breadcrumbs, mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay seasoning, salt, and black pepper. Gently mix until all ingredients are well incorporated. Be careful not to break the crab meat too much.

    Form the Crabcakes

    Using your hands, shape the mixture into patties, about 1 inch thick and 3 inches in diameter. Place the formed crabcakes on a plate or baking sheet lined with parchment paper. Cover with plastic wrap and refrigerate for at least 30 minutes to help them firm up.

Cooking the Crabcakes

    Heat the Pan

    In a large skillet, heat olive oil and butter over medium heat until the butter is melted and starts to bubble.

    Cook the Crabcakes

    Carefully add the chilled crabcakes to the skillet, not overcrowding the pan. Cook for about 4-5 minutes on each side, or until golden brown and crispy. You may need to do this in batches.

    Once cooked, transfer the crabcakes to a paper towel-lined plate to drain any excess oil. Serve warm with lemon wedges and tartar sauce on the side.
